Golden Cake recipe
Our Golden Cake brings together moist sponge cake, tasty coconut and light meringue to make one delicious dessert. This easy cake recipe is perfect for kicking off the new year, because it’s so simple and with only a few ingredients, it won’t break the bank either. Coconut & Meringue Golden Cake ingredients
250g butter
400g sugar
6 eggs (separated)
10ml vanilla essence
260g cake flour
20g baking powder
250ml milk
150g desiccated coconut
Method
- Cream the butter with half (200g) of the sugar
- Gradually add the egg yolks and vanilla essence and beat well
- Sift the flour and baking powder and gently add it to the creamed mixture
- Add the milk, and mix well
- Spread the mixture into a pre-greased deep 28cm baking pan
- Whisk your egg whites in a clean glass or metal (never plastic) bowl until soft peaks form
- Gradually add the remaining 200g sugar and beat until stiff to make the meringue
- Gently fold the desiccated coconut into the meringue
- Spoon the meringue onto the batter already in the baking pan
- Bake for 50 – 60 minutes at 160°C until the meringue starts to brown
