At lunchtime, try the vegan-friendly version of our iconic Chicken Mayo Toasted Sandwich – the Smashed Chickpea Mayo Open Sandwich, made with vegan mayo, fresh hummus and slices of red apple, red onion and cucumber on your choice of wholewheat or rye toast. Chef Mokgadi helped us create this recipe because she loved our Chicken Mayo Toasted Sandwich so much during her childhood.
